Making a grain-free Thai dish for evening meals in the winter months… This is really simple and only takes 20 minutes!
This meal is soooo good and will not leave you with a carb-hangover like a big rice or pasta dish! The quinoa is packed full of amino acids, the coconut is a healthy source of fat, the mushrooms are full of Vitamin D, coriander is detoxifying and the lime alkalising! We are onto a winner!
Although it’s not raw, it is totally gluten free, grain free, sugar free, dairy free and preservative free!
1/2 cup uncooked quinoa, 1 cup of water, 100ml coconut milk, 1 tbsp coconut butter, 2 tsp green Thai curry paste (glass jar, no preservative), 1 red onion and mushrooms. Simply pop all ingredients into a pot and let simmer slowly until quinoa is fluffy and veggies are soft. Garnish with lime and fresh coriander… Enjoy!!xx
